The popularity of mulled wine from vintners continues unabated
German mulled wines are in trend not only locally, but also worldwide. As well as the most frequently enjoyed red version, white mulled wines and hot rosé beverages also became more popular in 2019.
It is one of the highlights in the Deutsche Weine App, the newly released app from the German Wine Institute now available in the Google and Apple stores, although only in German language at this stage. Tips: wine selection and preparation
Whether a single grape variety or a cuvée, those who prefer to prepare their own mulled wine should pay attention to the quality of the base wine: Pinot Noir, Dornfelder or Regent grape varieties are well suited for classic Glühwein.
For white mulled wine, grape varieties with mild acidity such as Müller-Thurgau, Silvaner or Kerner are recommended. Those who like particularly aromatic beverages can turn to varieties such as Scheurebe or Bacchus. When heated, their wine aromas are particularly strong and harmonize nicely with the spicy additives.
Glühwein or Winzerglühwein?
The term "Winzerglühwein" may only be used if the mulled wine was prepared from the winery’s own wines. The indication " Deutscher Glühwein"is more general and refers to a mulled wine made from German products.
According to the German wine law, mulled wine is a "flavored drink containing wine" that is made exclusively from red or white wine and is sweetened and seasoned. The addition of alcohol is prohibited, as is that of water or colouring. The alcohol content must be at least 7% volume and less than 14.5% volume.
To prepare your own mulled wine:
Take a liter of local red wine, sweeten it with candy or honey to taste and then add a sliced (untreated with sprays) lemon or orange, four cloves and a stick of cinnamon. Pieces of apple refine the taste. If you use sweet or semi-dry wines, you will need less sweetening. For white mulled wines, the cloves are replaced with star anise.
Heat slowly over medium heat and be careful not to let it boil, otherwise the delicate fruit aromas will be lost and the taste will become bitter. Steep for a few hours, maybe even overnight, so that the aromas can fully unfold. Before serving, remove the spices from the wine and do not serve too hot.
